ASTI DOCG EXTRA SECCO
The Extra Dry Asti DOCG by Arione is an innovating wine, giving a new style to ASTI DOCG. “Extra” as it is an extra dry sparkling wine, dryer and less sweet than the traditional Asti DOCG. A new concept and a new taste for a wine that shaped the history of our territory, Langhe and Monferrato, UNESCO World Heritage.
Food pairings: this wine is perfect throughout the meal and excellent with aperitifs, light appetizers, first courses based on pasta with meat sauce, fish and vegetables, baked pasta and risotto, fish soups, fish with a strong flavor, boiled vegetables, fresh fruit, fruit in syrup, berries.

Tasting notes
Harvest: end of August, beginning of September, hand made. Soft pressure, without taking away the wood from the clusters, in pneumatic presses, to avoid damages of the wooden part of the cluster which could brings some unwanted components to the wine. Refrigeration of the must at 6-8°C to block any beginning of fermentation and to favour the natural decantation of the skins. Then, another refrigeration, bringing down the temperature at 0°C to definitively block the fermentation. The must, conserved sweet, is stocked in big inox tanks, in a refrigerated area; with this procedure, aromatic bouquet is preserved till the consumption. At any time of the year, following needs, the must can be taken from the refrigerated area and put in fermentation in airtight tanks, where it develops carbon dioxide (which causes the characteristic foam and the fine perlage).
Thanks to the rest on selected yeasts for about 3 months, ASTI DOCG EXTRA SECCO ARIONE releases even more the aromatic potential, characteristic of this wine.
Bottling, using isobaric fillers, in special bottles (resistant for a 4-5 bar pression); cork is secured with metal cage.
