MOSCATO D’ASTI DOCG “VIGNA SAN GIORGIO”
A modern, fresh style of Moscato d’Asti DOCG that represents one of the most iconic wines of the Piedmontese wine tradition. Sweet and delicate in flavor, it recalls peach and apricot with hints of sage, lemon, and orange blossom. Ideal for pairing with small pastries or desserts.
Food pairings: Dry biscuits, cakes, fresh and dry fruits. For a new experience enjoy the contrast to dishes with salty and spicy flavors, like seasoned cheeses and anchovies.

Tasting notes
Harvest time: late August to early September, with manual selection of the grape clusters. The grapes used for the production of Moscato Contessa come exclusively from the best vineyard owned by the Arione family in the territory of the municipality of Castiglione Tinella. Soft pressure, without picking the wood from the bunches, by using pneumatic presses, to avoid damaging the wooden part of the bunches, which could give unwanted flavours to the wine. Refrigeration of the must at 6 to 8°C, to stop any beginning of fermentation and to favour the natural decantation of the skins. Then, another refrigeration, bringing down temperature to 0°C, to permanently block fermentation (must has to be maintained sweet). Storage: in big inox tanks, in a refrigerated area; with this process, the aromatic bouquet is conserved untill consumption. Following needs, must is taken from the refrigerated area to be put in airtight tanks for fermentation. Fermenting must develops carbonic anydrid, which causes a delicate foam and a characteristic aroma. To be consumed young.
