Light and fresh sparkling wine perfect as aperitif and with light foods. The delicate aroma of flowers and fruit releases a subtle scent of wildflowers.
Food pairings: Aperitifs, sandwiches, starters, fish soups, white meats, vegetables based dishes, pasta, rice and other dishes typical of Mediterranean cuisine. To be enjoyed also with fresh cheeses and fruit, such as wood berries.

Tasting notes
Harvest: between August and September. Crushing without de-stemming and soft pressing in pneumatic presses to avoid breaking the woody part of the bunch (stalk), which could bring unwanted components to the wine. Natural decantation of the lees and inoculation with selected yeasts for a correct fermentation at a controlled temperature. Through this procedure, the floral and fruity characteristics are preserved. After fermentation, filtration and storage of the base white wine in suitable containers.
The wine is put in airtight tanks (autoclaves) where, adding selected yeasts, the second fermentation takes place, developing carbon dioxide, which gives to the wine the foam, and its fresh and typical bouquet is released.
Bottling, by using isobaric fillers, in special bottles (resistant to 4-5 bar pressure); cork is secured with a wire hood. To be consumed within 2 years.
